I've been eating more fruit and vegetables as I've been running more. I find that I have more energy and feel better when I eat them, but sometimes I have problems figuring out how to incorporate them into my everyday routine. Luckily the kitchn had a timely 10 Easy Ways to Eat More Vegetables post yesterday!
I've definitely been doing #9 - substitute raw vegetables for breads in your snacks (hello, carrots and hummus). But I'd never even thought about #2 - putting your vegetables on the top shelf of your fridge - or #8 - eating a salad at every meal. I've even got some homemade vinaigrette hanging out, waiting to be used.
